Honey Apple Butter

Ingredients
  Tart cooking apples 2 Quart
  Cinnamon 1 Teaspoon, ground
  Allspice 1⁄8 Teaspoon, ground
  Mace 1⁄2 Teaspoon, ground
  Honey 2 Cup (32 tbs)
  Lemon 1⁄2 , juiced and grated rind
  Mint vinegar 2 Cup (32 tbs)
Directions

Core and slice apples.
Put with all other ingredients into large kettle.
Cook slowly for several hours, stirring frequently, until thick.
Pour into hot sterilized jars.
Seal.
