Honey Apple Butter
|Tart cooking apples||2 Quart|
|Cinnamon||1 Teaspoon, ground|
|Allspice||1⁄8 Teaspoon, ground|
|Mace||1⁄2 Teaspoon, ground|
|Honey||2 Cup (32 tbs)|
|Lemon||1⁄2 , juiced and grated rind|
|Mint vinegar||2 Cup (32 tbs)|
Core and slice apples.
Put with all other ingredients into large kettle.
Cook slowly for several hours, stirring frequently, until thick.
Pour into hot sterilized jars.
