Peanut Butter Cuffins

Peanut butter muffins, fondly called peanut butter cuffins are simple peanut butter muffins. Baked with peanut butter, brown sugar and vanilla, this classic muffin recipe is worth treasuring.
  All purpose flour 1 Cup (16 tbs)
  Baking powder 2 Teaspoon
  Peanut butter 2 Cup (32 tbs)
  Shortening 3 Cup (48 tbs), softened
  Vanilla 1 Teaspoon
  Packed brown sugar 1⁄2 Cup (8 tbs)
  Eggs 2
  Milk 4 Cup (64 tbs)

In a large bowl, mix together flour, baking powder and salt.
In another bowl, cream together peanut butter, shortening and vanilla.
Gradually add brown sugar, beating with a spoon until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add to flour mixture alternately with milk.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes.
NOTE: You can frost the cuffins with peanut butter and sprinkle with icing sugar.
