Peanut Butter Cuffins
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Peanut butter||2 Cup (32 tbs)|
|Shortening||3 Cup (48 tbs), softened|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Milk||4 Cup (64 tbs)|
In a large bowl, mix together flour, baking powder and salt.
In another bowl, cream together peanut butter, shortening and vanilla.
Gradually add brown sugar, beating with a spoon until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add to flour mixture alternately with milk.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes.
NOTE: You can frost the cuffins with peanut butter and sprinkle with icing sugar.
