Rendering Fat For Dripping
|Trimmings of fat||3 Pound|
|Cold water||1⁄2 Pint|
1 Cut the fat into small even-sized pieces.
2 Remove all skin and any traces of lean meat left on the fat.
3 Into a strong deep , put the fat and cover with cold water.
4 Bring to a boil and let boil rapidly.
5 Remove any scum that rises to the surface.
6 Allow to boil until the fat is soft and all the water is evaporated.
7 Lower the heat, and continue cooking.
8 Gently cook until the bits of skin are crisp and begin to sink to the bottom of the pan, and the surface of the fat is " still ".
9 Allow to cool.
10 Strain through a clean kitchen towel or double muslin.
11 Set aside to solidify.
12 Use as desired.
