Lemon Butter

Ingredients
  Unsalted butter 3 Ounce
  Lemon 1 , rind grated
  Caster sugar/Icing sugar 2 Ounce
  Lemon 1⁄2 , juiced
Directions

MAKING
1) In a bowl, add butter and soften.
2) Add grated rind of lemon, and caster or icing sugar a little at a time with the juice of half the lemon.
3) Beat till light and fluffy.
4) Pour out into a small dish and allow to firm.

SERVING
5) Serve over fish fillet.
