|Eggs||6 Cup (96 tbs)|
|Sugar||2 Cup (32 tbs)|
|Lemons juice||3 Tablespoon|
|Grated lemon rind||1 Tablespoon|
|Butter||1⁄2 Cup (8 tbs)|
1) In the top of a double boiler, beat in the eggs and sugar.
2) Add in the lemon juice and rind.
3) Stand over boiling water and cook while stirring, till thickened.
4) Add in the butter and cool.
5) Transfer to a jar.
7) Serve as a side with crackers or over pies.
