Creamy Peanut Butter Soup

Ingredients
  Onion 1⁄4 Cup (4 tbs), diced
  Garlic 1 Clove (5 gm)
  Garlic 1 Clove (5 gm), minced
  Enriched all purpose flour 2 Teaspoon
  All-purpose flour 2 Teaspoon
  Instant chicken broth and seasoning mix 1 Ounce (1 Packet)
  Water 1 1⁄2 Cup (24 tbs)
  Diced carrot 2 Tablespoon
  Carrot 2 Tablespoon
  Peanut butter 3 Tablespoon
  Diced celery 2 Tablespoon
  Evaporated milk 1⁄2 Cup (8 tbs), skimmed
  Chunky-style peanut butter 3 Tablespoon
  Evaporated skimmed milk 1⁄2 Cup (8 tbs)
  Salt 1 Dash
  White pepper 1 Dash
Directions

MAKING
1. In a 1-quart nonstick saucepan, place the onions and the garlic and simmer on low heat till the onion is cooked through.
2. Add flour to the pan and cook while stirring for 2 minutes or longer
3. Add broth to the pan and mix again. Add water to the pan to thin down the soup
4. Add carrots and the celery and bring the soup to the boil
5. Reduce heat and cover the dish. Simmer on low heat till the vegetables are cooked through. This will take 10 minutes
6. Measure ½ cup of the soup and mix it with the peanut butter. Mix well
7. Add this mixture back to the pan and mix well till it is smooth
8. Simmer this mixture for three minutes
9. Add the milk and simmer for 2 minutes till cooked through. Take care not to boil this mixture

SERVING
10. Season with salt and pepper and ladle into 2 soup bowls garnished with celery
