Planked Trout With Almond Lemon Butter

Ingredients
  Lemon zest 1⁄2 Teaspoon
  Olive oil 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Freshly ground pepper 1⁄8 Teaspoon
  Trout 1 Pound, cleaned
For almond lemon butter
  Butter 1⁄4 Cup (4 tbs)
  Softened butter 1⁄4 Cup (4 tbs)
  Toasted sliced almonds 1⁄2 Cup (8 tbs), lightly crushed
  Sliced toasted almonds 1⁄2 Cup (8 tbs), lightly crushed
  Chopped parsley 1 Tablespoon
  Lemon juice 2 Teaspoon
  Garlic 1 Clove (5 gm), minced / passed through a garlic press
  Garlic clove 1 , minced or passed through a garlic press
Directions

GETTING READY
1. In a large bowl in the ingredients for the marinade and mix well
2. Add the trout to the marinade and turn the trout evenly ensuring that it is coated with the marinade
3. Allow the fish to marinade for 30 minutes in the refrigerator
4. Season and preheat the plank to 350 degrees

MAKING
5. Arrange the trout into the oval of the preheated plank
6. Collect a little of the lemon zest from the marinade and sprinkle over the tops of the trout
7. Bake for 30-40 minutes

FINALIZING
8. In a small bowl, set out the butter and blend well with the almond, lemon, parsley and garlic till smooth
9. Cover and set aside till required

SERVING
10. Serve the fish hot with the almond butter sauce on the side or on the top with fresh chives.
