Banana Peanut Butter Loaf
|Sifted enriched flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Shortening||1⁄3 Cup (5.33 tbs)|
|Crunchy peanut butter||3⁄4 Cup (12 tbs)|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Eggs||2 , slightly beaten|
|Mashed ripe bananas||1 Cup (16 tbs)|
Set oven for moderate, 350 degrees.
Mix and sift first four ingredients.
Cream shortening and peanut butter; add sugar gradually.
Continue creaming until light and fluffy.
Add eggs; beat well.
Stir in dry ingredients alternately with mashed bananas; mix well; do not beat.
Spoon batter into well greased loaf pan 8x4x3-inch.
Bake for 1 hour.
