Peanut Butter Refrigerator Cookies
|Flour||2 Cup (32 tbs), sifted|
|Baking powder||3⁄4 Teaspoon|
|Butter/Margarine/vegetable shortening||1⁄3 Cup (5.33 tbs)|
|Peanut butter||1⁄4 Cup (4 tbs) (Creamy Or Crunchy)|
|Sugar||3⁄4 Cup (12 tbs)|
|Peanuts||1⁄2 Cup (8 tbs), roasted blanched and chopped|
Sift flour with baking powder and cinnamon and set aside.
Cream butter, peanut butter, and sugar until light; add egg and beat well.
Slowly add dry ingredients; stir in nuts.
Shape dough into a roll 2"-2 1/2" in diameter; wrap and chill several hours until firm.
Preheat oven to 400° F.
Slice roll 1/8" thick, arrange 1" apart on ungreased baking sheets, and bake 6-8 minutes until pale tan.
Cool 1 minute on sheets before transferring to wire racks.
