Peanut Butter Kiss Cookies
|Chunky peanut butter||1 Cup (16 tbs)|
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Butter||4 Ounce, softened|
|Vanilla extract||1 Teaspoon|
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking soda||1 Teaspoon|
|Unsalted peanuts||1⁄4 Cup (4 tbs), finely chopped|
|Milk chocolate kisses||9 Ounce (1 Package)|
1. Preheat oven to 350°F. In a large bowl, beat peanut butter, brown sugar, and butter with an electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla until well blended.
2. Mix flour, baking soda, and salt and beat in until dough is smooth, scraping down side of bowl frequently with a rubber spatula.
3. Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Sprinkle chopped peanuts onto tops of cookies; press dough to flatten slightly.
4. Bake 8 minutes. Meanwhile, remove foil wrappers from kisses. Remove cookies from oven; leave oven on. Carefully press a kiss pointed side up into the center of each cookie. Return to oven and bake 2 to 4 minutes longer, or until golden brown. Let cookies cool 2 minutes on sheets, then remove to racks and let cool completely. Store in a tightly covered container.
