Dairy Free Peanut Butter Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Peanut butter||1 Cup (16 tbs)|
|Packed brown sugar||1 Cup (16 tbs)|
|All purpose flour||2 1⁄4 Cup (36 tbs)|
Mix all ingredients except flour until light and fluffy.
Blend in flour.
Shape dough into 1 -in balls.
Place 6 to 8 balls in large ring on wax paper on microwave-proof baking sheet, large dinner plate, pie plate or paper plate.
Place 1 or 2 in center.
Flatten to about 1/2-in with fork.
Microwave at 50% (Medium) 1 to 4 1/2 minutes, rotating 1/4 turn after 1 minute, then every 30 seconds.
Remove wax paper with cookies on it to countertop or wire rack.
Top each with 1/2 teaspoon each jelly and peanut butter, if desired.
