Old Time Apple Butter
|Tart red apples||10 Large|
|Water||2 Cup (32 tbs)|
|Lemon||2 , juiced|
|Sugar||2 Cup (32 tbs) (Equal Amount To Pulp)|
|Cinnamon stick pieces||4|
|Ginger root pieces||2|
Wash and quarter the apples into a saucepan.
Add the water and lemon juice.
Cover and simmer until very soft.
Press through a coarse sieve.
Measure the pulp into a saucepan and add an equal amount of sugar.
Add spices tied in a cheesecloth bag.
Simmer gently until thick, stirring frequently.
Discard spice bag.
Spoon mixture into 6 or 7 sterilized jelly glasses.
Cover with paraffin.
