Old Time Apple Butter's picture
  Tart red apples 10 Large
  Water 2 Cup (32 tbs)
  Lemon 2 , juiced
  Sugar 2 Cup (32 tbs) (Equal Amount To Pulp)
  Cinnamon stick pieces 4
  Cloves 5
  Ginger root pieces 2

Wash and quarter the apples into a saucepan.
Add the water and lemon juice.
Cover and simmer until very soft.
Press through a coarse sieve.
Measure the pulp into a saucepan and add an equal amount of sugar.
Add spices tied in a cheesecloth bag.
Simmer gently until thick, stirring frequently.
Discard spice bag.
Spoon mixture into 6 or 7 sterilized jelly glasses.
Cover with paraffin.
