Peanut Butter Cookies

  Unsalted margarine 1⁄2 Cup (8 tbs)
  Low sodium peanut butter 1⁄2 Cup (8 tbs)
  All purpose flour 1 1⁄4 Cup (20 tbs)
  Packed brown sugar 3⁄4 Cup (12 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Egg white 1
  Vanilla 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Baking powder 1⁄2 Teaspoon

In a large mixing bowl beat margarine and peanut butter with an electric mixer on medium to high speed for 30 seconds.
Add 1/2 cup of the flour, brown sugar, sugar, egg white, vanilla, baking soda and baking powder.
Beat mixture till thoroughly combined, scraping the sides of the bowl occasionally.
Beat or stir in the remaining flour.
If necessary, cover and chill dough in the refrigerator till easy to handle.
Shape dough into 1-inch balls.
Place 2 inches apart on an ungreased cookie sheet and flatten the balls.
Bake in a 375° oven for 7 to 9 minutes or till bottoms are lightly browned.
Cool cookies for 1 minute on cookie sheet.
Remove the cookies from the cookie sheet and cool on a wire rack.
