Peanut Butter Cookies

Ingredients
  Unsalted butter 1⁄2 Pound (At Room Temperature)
  Granulated sugar 1 Cup (16 tbs)
  Light brown sugar 1 Cup (16 tbs), packed
  Eggs 2
  Vanilla extract 2 Teaspoon
  Smooth peanut butter 1 1⁄2 Cup (24 tbs)
  Unbleached all-purpose flour 3 1⁄3 Cup (53.33 tbs)
  Baking soda 1 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Coarsely chopped peanuts 3⁄4 Cup (12 tbs)
Directions

1. Preheat oven to 300° F. Grease a cookie sheet lightiy.
2. Cream butter and sugars until light. Add eggs, vanilla, and peanut butter, being careful not to overbeat.
3. Sift in dry ingredients and mix well. Stir in peanuts.
4. Drop heaping teaspoonfuls of dough onto cookie sheet and flatten with fork tines. Bake 15-18 minutes, or until the cookies are brown at the edge but soft in the middle. Let cookie sheet cool between batches.
