Hello everyone! My name is Hailey; I work here at Tracy Porter. My first passion is fashion, but I also love to bake. This past weekend I had a craving for peanut butter cookies.
1 Cup (16 tbs)
3⁄4 Cup (12 tbs)
Preheat your oven to 325F.
Mix together peanut butter, sugar, and egg until combined. Refrigerate the dough for 30 minutes.
Roll the chilled dough into 2 balls. Flatten each ball with a fork coated in sugar, making a criss cross pattern. (Another thing I love to do is to roll the dough completely in sugar it makes a wonderfully crunchy outside.)
Bake for 18-20 minutes, or until light golden brown.
Then for the chocolate! Get out your favorite chocolate (chips, baking squares, etc) and melt! The easiest way to melt chocolate is to stick it right in the microwave. Chocolate is really easy to burn, so start out with your microwave on HALF power, and microwave chocolate for 1 minute. Take out and stir. If the chocolate is not fully melted yet, microwave for 10 more seconds, then stir again. Keep doing this until your chocolate is melted.
Dip one half of your cookie in the chocolate, and then if you want to dip in crushed peanuts! Chill in the refrigerator until chocolate is hardened.
