Homemade Peanut Butter Cookies
|Butter/Margarine||1⁄2 Cup (8 tbs) (1 stick)|
|Crunchy peanut butter||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Brown sugar||1 Cup (16 tbs) (packed)|
|All purpose flour||1 Cup (16 tbs)|
|Baking soda||3⁄4 Teaspoon|
1. Preheat convection oven to 375°F.
2. Cream butter, peanut butter, vanilla extract, and brown sugar in a bowl. Add egg and beat well. Blend flour, baking soda and salt. Add flour mixture gradually to creamed mixture, mixing until blended. Drop by teaspoonfuls onto ungreased round metal trays. Flatten each with a floured fork, making a crisscross pattern.
3. Put one tray on each metal rack. Cook in convection oven 9 to
10 minutes at 375°F, or until edges are lightly browned. Let cookies cool slightly on trays, then transfer to cooling racks.
4. Preheat oven to 375°F. Repeat, using remaining cookie mixture.
