Peanut Butter Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Peanut butter||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking soda||1 Teaspoon|
Preheat oven to 375 °F (190 °C).
Butter a cookie sheet.
In a bowl, cream shortening, sugar and brown sugar.
Fold in peanut butter, egg and vanilla extract.
In a second bowl, sift flour, baking soda and salt.
Fold into first mixture.
Mix to a smooth dough.
Shape dough into 1 inch (2.5 cm) balls.
Using a fork previously dipped in hot water, lightly flatten balls.
Decorate each one with a peanut.
Bake in oven 10-12 minutes.
