Artichoke Hearts In Lemon Butter
|Minced onion||1⁄2 Cup (8 tbs)|
|Garlic||1⁄2 Clove (2.5 gm), crushed|
|Chicken broth||3⁄4 Cup (12 tbs)|
|Artichoke hearts||30 Ounce, drained (2 15 Ounce Cans)|
|Lemon juice||3 Tablespoon|
|Salt||1 1⁄2 Teaspoon|
|Grated lemon rind||1⁄4 Teaspoon|
Saute onion and garlic in butter in medium saucepan until transparent.
Add broth and artichokes.
Season with lemon juice, salt, oregano, and lemon rind.
Simmer 10 minutes or until artichokes are heated through.
Two packages cooked, frozen artichokes can be used in place of canned artichokes.
