Drop heaped teaspoons of choux pastry into a large saucepan or deep fryer half-filled with oil. Cook for 2-3 minutes, until puffed crisp and golden. Don’t lift them out too soon as they continue to expand in size, allowing the pastry in the centre to cook. If you’re filling with fruit pieces slit beignets open and fill. In a bowl combine sugar and cinnamon gently toss beignets while still warm until well coated. Serve on warm plates with cream or ice cream.
