Broad beans, also known as fava beans, and are rich in carbohydrates and potassium. Here’s some tips on cooking and using these flavourful and versatile beans.
To remove the skin of fresh broad beans, plunge them in boiling water for a few minutes then drain and rinse under cold water, or soak for 12 - 24 hours, then simply peel away the soft skin. Whole dried beans need to cook for about 2 hours, while fresh beans are ready in about 20 minutes. Skinned dried beans only need to be soaked for 8 - 12 hours and cook in about 1½ hours. Broad beans are delicious in soups and simmered dishes, and can be used cold in salads, appetisers or as a sandwich spread.
