BASIC FLAVOURINGS

SALTY---salt, soya sauce,soya bean paste

SWEET—sugar, honey, jam ,jellies

SOUR----vinegar, plum sauce,tomato sauce, wine.

HOT---chilli, peppers, ginger, mustard

BITTER---almonds, orange peel, herbs

AROMATIC—wine, garlic,spring onions,sesame seeds

EIAN---meaning delicious due to flavorings like msg, oyster sauce,shrimp sauce, chicken stock

 

            BASIC COMBINATION OF FLAVOURS

Sweet and sour----salt ,sugar, vinegar,jam , ketchup, etc.

Sweet and salty---salt, sugar,soya sauce

Hot and sour----chilli, chilli bean paste, vinegar, wine

Hot and salty----soya sauce and chilli

Hot and aromatic---chilli oil, mustard, curry pwd.

Salty and aromatic----salt, sichuan pepper
