It's National Potato Day!  Mashed or smashed are my favorite ways to eat a tater.  One of my fav ways to make smashed taters is to first bake the taters instead of boil them.  Brings a nice change in taste and mouth feel.  Bake them off in the oven then make them just like you would.  You can use milk or cream (stock if you want as well), butter, salt and pepper - smash them up don't whip them with a beater...
