Zagrebački Odrezak

 

Zagrebački Odrezak is the Croatian version of Weiner Schnitzel. Originally, Weiner Schnitzel is made with lamb that is breaded and fried. This dish is now made with layers of meat that are rolled up to make a drum-like meat roll that is filled with cheese and then deep-fried.  

 

History of the Zagrebački Odrezak

Not much is known about the exact origin of the Zagrebački odrezak recipe but there are several variations of this recipe in Europe and Asia. Croatia and Serbia both have a shared history and they do have several similar dishes from several local cultures in Europe.  Both states have a tangled history with all the Mediterranean states and many dishes are borrowed from neighboring states but given local names. This version is very popular in Zabreb which is the capital of Serbia. Zagreb is located on the Dalmatian coastline and this region is characterized by the use of local ingredients and simple cooking techniques. This dish is credited to Zagreb, where thin slices of veal are alternated with chicken strips and then stuffed with ham and cheese.

Traditionally, the dish is prepared with lamb or veal. The meat is beaten into thin sheets the meat pieces are floured and then deep fried. But there are many variations of the dish as chefs can layer the lamb or veal meat with chicken or ham and then roll the meats around cheese. This is then dipped in egg and bread crumbs and then deep fried before serving. There are many more variations of the basic recipe.

 

Serving Zagrebački Odrezak

This main dish is served during the winter season and for special occasions. Generally, it is served with steamed vegetables or fries. Cooks may also serve a slice of lemon, pasta sauce or cheese sauce with the dish.  There are a few variations where the dish is served with steamed rice or pasta and cheese sauce.
