Faggot

Faggot is traditional British dish that is usually made by using pork meat offal and meat off cuts. Mainly found in South and Mid Wales and the Midlands of England, this dish is traditionally made by pig’s liver, heart and fatty belly meat. This pig meat is usually mixed with bacon minced, herbs for seasoning and some freshly made breadcrumbs. The meat mixture is rolled into small bite sized balls and wrapped with caul fat. Caul fat is the omentum membrane from the pig's abdomen. These balls are generally baked and mainly served with mashed peas and potatoes. The dish is mostly served with thick slices of freshly buttered bread and mushy peas.

 

 

History Of Faggot Recipe

The name of the recipe was cited for the first time in the year 1851 in London, UK in an edition of Oxford English Dictionary by Thomas Mayhew. However, the dish that was mainly a calzone- or pasty-like dish, which has been wrapped with caul and contain mixed pork offal inside. The dish actually gained popularity during World War II. In earlier times, this dish is usually prepared at home or found in market stalls and traditional butchers' shops.

It is also referred as "ducks" in the various places such as Midlands, Yorkshire, Lincolnshire and Lancashire. Also called as "savoury ducks," this dish was made by rolling up in an oatmeal cake in the year 1905.

Another version of this dish is named "Faggots and Peas" which was invented in the 18th century. This is basically a combination in the Black Country region of the West Midlands. Mostly available in the small butcher’s shop, this dish is mainly contain heavy gravy and cooked in a crock.

 

 

Faggot Recipe : Ingredients Used

Faggot is generally prepared by using some simple ingredients that can be divided into three sections i.e. ingredients for the faggot, gravy and mushy peas. Ingredients needed for making the faggot are coarsely minced fat belly pork, lean shoulder pork, tubes removed & coarsely minced fresh pig’s liver, streaky bacon, fresh breadcrumbs, oatmeal, ground mace, pinches ground cloves, brown sugar, chopped fresh sage leaves, small bunches thyme, caul fat, bay leaves and chicken stock.

Apart from these, some other ingredients like thinly sliced large onion, unsalted butter, olive oil, faggot pan juices, skimmed fat and beef stock are used to make the gravy.

Lastly, mushy peas are prepared by using dried marrowfat peas, butter, pinches sugar, vinegar, or lemon juice and mashed potato.

 

 

Faggot Recipe : Popular Methods

Faggot is essentially a baked a product that is made in three sections. To make this dish, the pig meat fry and boiled onions are chopped to mix together. This mixture is then coated with either cold boiled potatoes or breadcrumbs. Seasoned with sage, pepper, herbs, this mixture is wrapped with small caul pieces and prepared some balls. These balls are finally baked in a preheated oven at a temperature of 170 degree F.

1. The dish is also very popular as a joke in various Western regions and countries due to the double meaning of the name, faggot.

2. Portugal also invented a similar dish and named it as almôndega.

3. The dish is also marketed by a very popular commercial brand known as Mr Brain's Faggots, which sells frozen food product mostly in Britain. They usually prepared this dish using onions and liver wrapped into meatballs. Served in a sauce, this dish is quite different from the authentic version.

4. Faggot is also among the main subjects of a well-known radio advertisement featured in the year 2004 produced by the UK supermarket chain Somerfield.
