Dundee Cake

Dundee cake is a popular cake belonging to Scottish cuisine. It is made of fruits and has a layer of whole almonds on the top. These almonds are usually decorated in a circular way from the center to the edge of the cake. Dundee is the name of a Scottish city and since Keiller’s, a marmalade manufacturing unit of Dundee produced the recipe of this cake, the cake was known as Dundee cake. This cake was produced in the 19th century.

 

It is also said that the Queen of Scots, Mary, did not like cherries in cake and thus a Scottish baker came up with a cherry less cake recipe, especially for her. The cake was termed as Dundee cake.

 

Although, Dundee cake recipe originated in Scotland, the cake is very much relished in British Isles a lot.

 

Method Of Preparation And Ingredients Used For Making Dundee Cake

Dundee cake is an easy to make cake and is light and spongy. This cake is usually round in shape and is small. The ingredients needed for Dundee cake recipe are the basic cake ingredients such as flour, butter, sugar, eggs, baking powder, milk and sugar. Besides, almonds, currants, raisins, sultana, lemon juice, and whisky are also used for making this cake.

 

The butter and sugar are mixed in a bowl and simultaneously flour and eggs are added to the butter mixture. After stirring for some time, whisky is added along with lemon juice, nuts and milk. The mixture is poured in a greased cake tin. The top is flattened with hands and almonds are placed in circular motion. The cake is baked at 175 degrees Celsius. Once done, the top of the cake is brushed with sweetened milk to make a dry glaze.

Dundee cake is mostly relished as a snack item. It is served with a marmalade sauce. The sauce can be either used as a topping or can be served along with it. Whipped cream topping also enhance the taste of this rich flavored cake. The cake makes a delightful treat during festive season and is served with tea and coffee.
