Swedish Fried Smelts
|Smelts/Any other small fish||20 Medium, frozen (About 1 Pound, Fresh Or Frozen)|
|Canned anchovy fillets||2 Ounce|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Cooking oil||3 Tablespoon|
|Rye bread slice||4 , crusts removed and toasted|
|Svenskie sauce||1 Tablespoon|
|Dill sprigs||1 Tablespoon (Used For Garnishing)|
|Lemon twists||2 (Used For Garnishing)|
Thaw fish if frozen.
Remove heads; clean; bone.
Drain anchovies; reserve oil for sauce.
Cut in half lengthwise; place 1/2 anchovy inside each fish.
Sprinkle with salt and pepper; roll in flour.
In large skillet heat butter and cooking oil to moderate temperature.
Add fish; fry until crisp.
Place 5 fish on each slice of rye toast; spoon sauce over smelt.
