Sole With Shrimp Meringue
|Sole fillets||8 Ounce|
|Cooked shrimp||4 Ounce|
|Onion||1 Medium, sliced into rings|
|Sweet red pepper||1 , sliced into strips|
|Yogurt/Sour cream||2 Tablespoon|
|Grated parmesan cheese||3 Teaspoon|
Rinse sole and shrimp, pat dry.
Chop shrimp in small bits.
In a frying pan, heat butter over low heat until foamy.
Add onion and pepper to pan and cover.
Cook slowly over medium heat for 4 to 5 minutes until soft Slide sole on top of vegetables; cover pan and cook for 6 to 8 minutes, until sole is opaque.
While sole is cooking, separate egg; whip egg white until stiff but still glossy.
Fold in yogurt, cheese, and shrimp.
Mound this sauce over sole as soon as it is done, then transfer entire pan to oven; broil 3 to 4 minutes until browned.
