Swedish Seafood Salad
|Mixed cooked seafood||2 1⁄2 Cup (40 tbs), chopped|
|Diced cooked potatoes||1 Cup (16 tbs)|
|Sliced green onions/Chives||1⁄4 Cup (4 tbs)|
|Parsley||15 Milliliter, chopped (1 Tablespoon)|
|Chopped sour pickled cucumber||1⁄4 Cup (4 tbs)|
|Tomato||1 , diced and drained|
|Oil and vinegar dressing||1⁄3 Cup (5.33 tbs)|
|Prepared mustard||1 Teaspoon|
|Shredded lettuce||1 Cup (16 tbs)|
Toss the first six ingredients together and cover with a mixture of dressing and mustard.
Stir lightly and taste for seasoning.
Chill at least 2 hours.
Drain and pile mixture in the centre of an oval platter.
Surround with shredded lettuce and garnish with sliced radishes' and hard cooked eggs.
Pass with a bowl of mayonnaise.
