Salsify With Petrts Pois
|Vinegar||125 Milliliter (1/2 Glass)|
|Fresh lemon juice||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Tablespoon (Plain)|
|Milk||1 Cup (16 tbs)|
|Petits pois||1 Can (10 oz) (Extra Small)|
|Chopped fresh chervil||1 Tablespoon|
Clean the salsify under running water.
Pour the vinegar into a bowl of cold water.
Peel the salsify with a sharp paring knife, remove each end and cut into 1/4 inch (6 mm) pieces, putting them immediately into the vinegared water.
Drain the salsify and put in a casserole with the lemon juice and 2/3 cup (150 ml/1/4 pint) of water.
Cover and microwave on HIGH for 15 minutes.
Put the butter in a bowl and melt in the microwave oven for 1 minute on HIGH.
Stir in the flour and add the milk, whisking constantly.
Microwave on HIGH for 3 minutes, whisking after every minute.
Season with salt and pepper.
Season the salsify with salt and pepper.
Drain the petits pois and add them to the salsify along with the egg yolk and the sauce.
Add the chopped chervil and stir well.
Cover and microwave on HIGH for 2 minutes.
