How to make Chocolate Biskvi

Today I'll be making Chocolate Biskvi. Simple Swedish almond-based cakes, filled with buttercream and covered in a generous coating of dark chocolate. Chocolate Biskvi go great with coffee!

Ingredients

For the bases
Almond paste 300 Gram , finely grated
Egg white 1
For the filling
Butter 100 Gram (at room temperature)
Icing sugar 50 Gram
Vanilla sugar 3 Teaspoon
Cocoa powder 3 Teaspoon
For the coating
Good quality plain chocolate 100 Gram
Butter 1 Tablespoon
Other ingredient
Flour 10 Gram

Directions

GETTING READY

Preheat the oven to 190 degrees Celsius (170 degrees fan). Line a baking sheet with parchment paper and set aside.

MAKING

In a large bowl, mix together almond paste and egg white.

Divide the batter out into 15 equal pieces and place over he prepared baking sheet.

Dust hands with the flour and flatten each pile of batter.

Bake in the oven for 10 minutes, until just starting to color.

Remove the bases from the oven and allow to cool for a couple of minutes before gently removing them from the baking paper. Transfer to a wire rack and allow to cool completely.

For the filling – In a bowl, beat together the butter, icing sugar, vanilla sugar and cocoa powder, until thick.

Once the bases have cooled, turn upside down and drop the filling and flat gently. Place into the refrigerator and allow to set for at least an hour.

For the coating - Using a double boiler, gently melt the chocolate.

Add in the butter and mix in well. Remove the chocolate from the heat and dip the biskvi - filling side down.

Set the biskvi base side down onto a tray and allow to set.

SERVING

Serve biskvi with coffee.

NOTES

Biskvi freeze really well, so if you want to save some for a later date then you don't need to worry about them degrading too much in the freezer!
