Floating Islands

This Floating Islands is a wonderful fruit dessert made using strawberries and milk and flavored with vanilla essence. Pretty much good to serve after any meal for any occasion, believe me, this Floating Islands is one of the easiest desserts you can whip up in minutes, so do give it a try!
  Milk 1⁄2 Pint
  Vanilla essence 3 Drop (Few Drops)
  Eggs 3 , separated
  Sugar 5 Ounce
  Fresh strawberries 1⁄2 Cup (8 tbs)

Heat the milk to simmering point in a large pan.
Add the vanilla essence.
Whisk 2 egg whites until stiff then whisk in 4 oz. (1/2 cup) of sugar a teaspoon at a time, whisking well after each addition.
Place tablespoons of meringue on top of the milk and poach for 10 minutes, until set.
Place meringue 'islands' on a plate.
Strain the milk and measure 1 pint (2-1 cups).
Beat together the egg yolks, remaining egg and remaining sugar.
Pour on the measured milk, return to the pan and heat gently, without simmering, until thickened.
Strain the custard into a large shallow dish.
Lay the 'islands' on top and serve with fresh strawberries.
Serve warm or cold.
