Corn Rarebit

  Chopped green pepper 1⁄2 Cup (8 tbs) (Fresh Or Frozen)
  Chopped onion 2 Tablespoon (Fresh Or Frozen)
  Butter/Margarine 2 Tablespoon
  All purpose flour 1 Tablespoon
  Chili powder 1⁄4 Teaspoon
  Tomato juice 1 Cup (16 tbs)
  Canned whole kernel corn 8 Ounce (Drained)
  Shredded process american cheese 1 Cup (16 tbs) (4 Ounce)
  Sliced pitted ripe olives 1⁄2 Cup (8 tbs)
  English muffins 2 , split and toasted

In saucepan cook green pepper and onion in butter till tender but not brown.
Blend in flour and chili powder.
Stir in tomato juice and corn, blending well.
Cook, stirring constantly, till thickened.
Stir in shredded cheese and olives; cook and stir over low heat till cheese melts.
Serve over English muffins.
Makes 4 servings.
