Finnish Cranberry Muffins
|Cake flour||2 Cup (32 tbs) (or)|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Baking powder||2 Teaspoon|
|Milk||3⁄4 Cup (12 tbs)|
|Melted butter||1⁄4 Cup (4 tbs)|
|Cranberries||1 Cup (16 tbs), chopped|
|Orange rind||1 Teaspoon, grated|
Combine flour, salt, sugar and baking powder, sifting well.
Blend eggs, milk and butter and pour into center well of dry ingredients.
Mix only until moistened.
Fold in the cranberries and grated orange rind.
Spoon into greased muffin cups and bake until done.
Bake at 400 degrees 20 to 25 minutes
