Norwegian Coconut Puffs
|Butter||1 Cup (16 tbs)|
|Crisco||1 Cup (16 tbs)|
|Sugar||2 1⁄2 Cup (40 tbs)|
|Cake flour||2 2⁄3 Cup (42.67 tbs)|
|Coconut||1 Cup (16 tbs)|
|Ammonium carbonate||2 Teaspoon|
Sift flour with ammonium carbonate, add to creamed sugar and shortening mixture.
Roll into balls, size of a walnut.
Bake at 350 degrees about 10 minutes until very light tan.
Makes a large batter.
Note: Ammonium carbonate can be purchased at the drug store.
If in lumps, crush to powder.
