|Beef round steak||2 Pound (Top Round, Bottom Round Or Sirloin, 0.5 Inch Thick)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Tomato sauce||1 Cup (16 tbs)|
|Minced green pepper||1⁄2 Cup (8 tbs)|
|Minced onion||1 1⁄4 Cup (20 tbs)|
|Canned tomatoes||16 Ounce|
Lightly score surface of meat; cut meat into 8 serving pieces.
Mix flour, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Sprinkle half the flour mixture on one side of meat; pound in.
Turn meat and pound in remaining flour mixture.
Melt shortening in large skillet.
Brown meat in shortening over medium heat about 15 minutes.
Reduce heat; cover tightly and simmer 1 hour.
Add small amount of water if necessary.
Mix Tomato Sauce ingredients; pour on meat.
(To serve whole recipe immediately, see below.) Cover; simmer 15 minutes.
Divide meat between 2 ungreased baking pans, 8x8x2 inches.
Spoon half the sauce on meat in each pan.
Wrap, label and freeze.
45 minutes before serving, remove 1 pan Swiss Steak from freezer and unwrap.
Cook uncovered in 400Â° oven until tender, 30 to 40 minutes.
