Belgian Spice Muffins

Ingredients
  Milk 1 Cup (16 tbs)
  Egg 1
  Butter 3 Tablespoon, melted
  Bran 1 Cup (16 tbs)
  All purpose flour 1 Cup (16 tbs)
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Baking powder 2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Grated orange peel/Lemon peel 1 Teaspoon
  Grated carrots 1 Cup (16 tbs)
  Raisins 1⁄2 Cup (8 tbs)
  Walnuts 1⁄2 Cup (8 tbs)
Directions

Blend milk, egg and melted butter in a small bowl.
Combine and sift all dry ingredients into a larger bowl.
Stir milk mixture into a well in the center of the dry ingredients.
Quickly stir in carrots, raisins and walnuts.
Spoon into muffin tins to three-fourths full.
Bake until golden brown.
Bake at 375 degrees about 15 minutes
