Stroganoff Au Perry
|Lean boneless beef sirloin||2 Pound|
|Onions||6 Medium, sliced|
|Fresh mushrooms||2 Pound|
|Tomato paste||2 Tablespoon|
|Sour cream||2 Cup (32 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Freshly ground pepper||1⁄2 Teaspoon|
|Marsala wine||1⁄2 Cup (8 tbs)|
|Cooked wild rice||3 Cup (48 tbs)|
Slice steak at angle into 1/4-inch strips.
Use butter equally in sauteing the beef until brown, onions for 10 minutes and mushrooms for 5 minutes.
Mix all three in large skillet.
Add tomato paste, sour cream and seasonings.
Cook over low heat for 30 minutes or until beef is tender.
Add wine and simmer 5 minutes longer.
Serve over bed of wild rice
