Russian Walnut Muffins.
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Tablespoon|
|Brown sugar||1⁄4 Cup (4 tbs)|
|White sugar||1⁄4 Cup (4 tbs)|
|Walnuts||1 Cup (16 tbs), chopped|
|Milk||1⁄8 Cup (2 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
Mix flour, baking powder, sugar and brown sugar in a large bowl.
Add chopped walnuts.
Whisk egg together with vanilla, milk and melted butter.
Make a well in the dry ingredients and add the wet ingredients, stirring quickly.
Batter will be lumpy.
Spoon into greased muffin cups and bake until lightly brown and muffins pull away from sides of tin.
Bake at 375 degrees 20-25 minutes
