Irish Coffee Muffins
|Instant coffee||1 Cup (16 tbs) (Instant, Regular Or Decaffeinated)|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Sugar||1 Cup (16 tbs)|
|Sour cream||1 Cup (16 tbs)|
|Irish whiskey||4 Tablespoon|
Brew one cup strong coffee (instant, regular or decaffeinated).
Mix together flour, baking powder, soda, salt and sugar.
In another bowl whisk eggs with sour cream.
Add coffee and Irish whiskey.
Make a well in the dry ingredients and add all the liquid ingredients, blending lightly and quickly.
Spoon batter into greased muffin tins and bake 20 minutes or until done.
Bake at 400 degrees 20 to 25 minutes
