Russian Veal Chops With Brains

Ingredients
  Veal chops 6
  Calf brain 2 , precooked (1 pair)
  Salt 1⁄4 Teaspoon
  Nutritional yeast 3 Tablespoon
  Wheat germ 1⁄2 Cup (8 tbs)
  Onion 1 , sliced and sauteed
  Parsley 3 Tablespoon, minced
  Whole wheat flour 1 Tablespoon
  Sour cream 3 Tablespoon
  Egg yolks 2 , diluted with few tablespoons stock
Directions

Broil chops briefly.
Arrange at bottom of large casserole.
Cover each chop with a slice of brain.
Blend salt, yeast and wheat germ together.
Dust tops of brains with mixture.
Cover and bake at 375° F. for 25 minutes.
Meanwhile, combine remaining ingredients in saucepan and cook over gentle heat.
When sauce is hot and slightly thick, pour over casserole.
Bake for an additional 15 minutes.
