Russian Veal Chops With Brains
|Calf brain||2 , precooked (1 pair)|
|Nutritional yeast||3 Tablespoon|
|Wheat germ||1⁄2 Cup (8 tbs)|
|Onion||1 , sliced and sauteed|
|Parsley||3 Tablespoon, minced|
|Whole wheat flour||1 Tablespoon|
|Sour cream||3 Tablespoon|
|Egg yolks||2 , diluted with few tablespoons stock|
Broil chops briefly.
Arrange at bottom of large casserole.
Cover each chop with a slice of brain.
Blend salt, yeast and wheat germ together.
Dust tops of brains with mixture.
Cover and bake at 375Â° F. for 25 minutes.
Meanwhile, combine remaining ingredients in saucepan and cook over gentle heat.
When sauce is hot and slightly thick, pour over casserole.
Bake for an additional 15 minutes.
