Russian Tea Cookies
|Cold butter||1 Cup (16 tbs), cut into pieces|
|Confectioner's sugar||1⁄2 Cup (8 tbs)|
|Sifted all purpose flour||2 Cup (32 tbs)|
|Walnuts||3⁄4 Cup (12 tbs)|
|Confectioner's sugar||1 Tablespoon (For Coating)|
Combine butter, sugar, vanilla, and salt in processor bowl.
Process with metal blade until light, about 15 seconds.
Add flour and process until a ball forms on the blades.
Scatter the walnuts over the dough and process a few seconds or until nuts are distributed.
Remove dough and return one-quarter.
Process until walnuts are coarsely chopped.
Remove and repeat with remaining quarters.Roll dough into 1inch balls and place on an ungreased baking sheet.
Bake at 400Â°F on the top oven shelf for 10 minutes, until set but not brown.
Roll at once in confectioners' sugar.
Cool on a wire rack and roll again in more sugar.
