Meringue Coconut Cookies
|Sugar||1 1⁄2 Cup (24 tbs)|
|Coconut||1⁄4 Pound, grated unsweetened|
Beat the egg whites in a mixing bowl until foamy.
Add the sugar 1 tablespoon at a time, beating continuously, until the meringue stands in stiff, glossy peaks.
Stir in the flour, mixing well.
Blend in the coconut and vanilla and mix until the dough is thoroughly blended.
Drop the batter with a tablespoon onto lightly oiled baking sheets about 1-inch apart.
Bake at 250 degrees for about 20 to 25 minutes, or until golden.
Transfer to wire racks to cool.
