Norwegian Baked Cod With Peppers
|Grated lemon rind||1 Pound|
|Dry white wine||2⁄3 Cup (10.67 tbs)|
|Sweet red pepper||1⁄4|
|Tomato paste||1⁄4 Cup (4 tbs)|
|Light cream||1⁄2 Cup (8 tbs)|
|Onion||1 , chopped|
|Garlic||2 Clove (10 gm), chopped|
|Lemon juice||1⁄2 Teaspoon|
|Chopped thyme||1 Pinch|
|Cheddar cheese/Parmesan cheese||1⁄2 Cup (8 tbs)|
|Bread crumbs||2 Tablespoon|
1 Preheat the oven to 400Â°F. Cut the fish into 5-inch slices and place them in an ovenproof dish. Season the fish with salt and pepper and add the lemon juice and white wine. Remove the membranes and seeds from the peppers and cut the fish into strips. Place the strips on top of the fish.
2 Mix together the tomato paste, grated lemon rind, flour, cream, chopped onion, chopped garlic, paprika and chopped thyme. Pour the mixture over the fish.
3 Sprinkle the fish with the cheese and breadcrumbs and bake in the preheated oven for 20-25 minutes.
