|All-purpose flour||1⁄4 Cup (4 tbs)|
|Beef bottom round/Beef round steak either top round / sirloin tip||2 Pound (1 Inch Thick)|
|Shortening||2 Tablespoon (Without Rind)|
|Tomatoes||8 Ounce (Around 0.75 Inch Thick)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Minced green pepper||1⁄4 Cup (4 tbs)|
Stir together flour, salt and pepper.
Sprinkle one side of meat with half the flour mixture; pound in.
Turn meat and pound in remaining flour mixture.
Cut meat into 6 serving pieces.
Melt shortening in large skillet; brown meat over medium heat, about 15 minutes.
Cover tightly; simmer 1 hour.
Add small amount of water if necessary.
Mix remaining ingredients; pour over meat.
Cover tightly; simmer 30 minutes or until tender.
