Braised Belgian Endive

Ingredients
  Belgian endive head 1⁄2 Pound
  Diced celery 1 Tablespoon
  Chopped onion 1 Tablespoon
  Diced pimiento 1 Tablespoon
  Water 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Bouillon granules 1⁄4 Teaspoon
Directions

Trim ends from endive, and remove any wilted or discolored outer leaves.
Cut each endive in half lengthwise.
Place in a medium skillet; sprinkle with celery, onion, and pimiento.
Combine water, lemon juice, and bouillon granules, stirring well; pour over endive.
Bring to a boil.
Cover, reduce heat, and simmer 10 minutes or until tender.
