Cherry Meringue Squares
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Cake and pastry flour||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Maraschino cherries||6 Ounce|
|Cream of tartar||1⁄4 Teaspoon|
|Brown sugar||1 1⁄4 Cup (20 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
Cream butter or margarine and 1/4 cup brown .sugar together.
Sift flour, baking powder and salt, and blend thoroughly with sugar mixture.
Pat into 8-inch square pan, and bake at 350 Ã‚Â°F. 15 minutes.
Sprinkle with quartered maraschino cherries.
Beat egg whites until frothy; add cream of tartar, and beat until soft peaks form.
Gradually add 1 1/4 cups brown sugar, and continue beating until stiff.
Fold in vanilla.
Spread me-ringue evenly over baked layer, and bake 25 minutes at 350Ã‚Â°F.
When cool cut into 24 squares.
