Tuna Tartare And The Bitter Pill

Hot From The Kettle visits Chakra in Paramus, NJ. Melody meets Chef Thomas Ciszak who demonstrates Tuna Tartare, and sommelier, Evelyn Hsu-Ciszak who mixes up the hangover tonic, The Bitter Pill.
Ingredients
  Yellowfin tuna fish 8 Ounce, cubed
  Coconut milk 1⁄2 Cup (8 tbs)
  Red hot chili pepper 2
  Ginger 1 Teaspoon, juice extracted
  Lemon grass 1 1⁄2 Teaspoon (For the Tuna Tartare in Coconut Milk)
  Kaffir leaves 3 , chop (For the Tuna Tartare in Coconut Milk)
  Lemon 1⁄2 , juiced (For the Tuna Tartare in Coconut Milk)
  Sea salt 1 Dash (For the Tuna Tartare in Coconut Milk)
  Tapioca 1 Tablespoon (Salted and cooked in Saffron; For the Tuna Tartare in Coconut Milk)
  Ground pepper 1 Dash (For the Tuna Tartare in Coconut Milk)
  Lemon oil 1 Teaspoon (For the Tuna Tartare in Coconut Milk)
  Chive 1 Tablespoon, chop (For the Tuna Tartare in Coconut Milk)
  Fair trade goji berry liquor 1 Ounce (For The Bitter Pill cocktail)
  Campari 1 Ounce (For The Bitter Pill cocktail)
  Pimm s cup no.1 gin 1 Ounce (For The Bitter Pill cocktail)
  Ice cubes 5 (For The Bitter Pill cocktail)
  Orange peel 1 (For Garnish For The Bitter Pill cocktail)
Directions

MAKING
1. For the Tuna Tartare in Coconut Milk: In a pan, heat the the kaffir leaves, chilli, ginger, coconut milk, lemongrass.
2. Strain out the coconut sauce and add lemon juice to it and stir once.
3. Blend the coconut sauce using a blender.
4. In a bowl, add tuna, sea salt, tapioca, ground pepper, lemon oil,chives and keep it aside.
5. For The Bitter Pill cocktail: In a glass, add Pimm's Cup No. 1 gin, Fair Trade Goji Berry Liquor, Campari and ice cubes and shake vigoriously.
6. Strain and pour over fresh ice into a Collins glass and garnish with an orange twist.

FINALIZING
7. Ladle the coconut foam or sauce on a deep bottomed plate and add tuna tartare on top.

SERVING
8. Serve tuna tartare with the refreshing bitter pill cocktail.
