Roast Grouse

Ingredients
  Grouse 3 Pound
  Bacon slices 6
  Pepper 1⁄4 Teaspoon
  Seasoned salt 1⁄2 Teaspoon
  Paprika 1⁄2 Teaspoon
  Celery leaves 2 Tablespoon
  Butter 3 Teaspoon
  Sherry 1 Cup (16 tbs)
  Orange juice 1 Cup (16 tbs)
Directions

Preheat oven to 375 degrees.
Rub pepper, seasoned salt and paprika inside grouse and over exterior.
Cover grouse breasts with bacon slices.
Fill each grouse with celery leaves; add 1 teaspoon butter per grouse to cavities.
Bake at 325 degrees for about 25 minutes per pound or until tender.
Combine sherry and orange juice; baste, if desired.
