Christmas Mince Pies

GETTING READY
1) Preheat the oven to 190C

MAKING
2) In a bowl mix the filling ingredients together an soak for about ½ hour
3) To make the pastry dough add the flour and butter into a food processor and pulse till it resembles a coarse texture
4) Add the salt and water and pulse it forms into big lumps
5) Take it out from the bowl and bring together to form a dough
6) Cover and leave in the fridge to rest
7) Roll out the dough using a rolling pin and cut out ½ cm thin rounds
8) Cut out 12 circles and place onto the muffin tray
9) Pu a teaspoon of the filling into each base
10) Roll more of the dough and cut out the tops
11) Place the tops on the filling
12) Give each of the pies an egg wash
13) Bake in the oven for about 11-15 minutes till golden brown
14) Leave to cool in the tray for about 5 minutes and then onto a wire rack to cool
15) Dust with icing sugar once cold

SERVING
16) Serve the pie with some clotted cream
