1. In a wok, heat butter, add turkey, fry for a couple of minutes. Add onion, fry for about 10 minutes.
2. Add in the sherry, water, salt and pepper, paprika and mustard. Let it simmer for another 5 minutes.
3. Add sour cream and stir to mix.
